Whether you’re heading out on your first vacation of the summer or staying in town for the long weekend, you may be looking for fun ways to teach your kids why we recognize Memorial Day and all that it means. So we’ve found some fun, patriotic recipes for food that will fill up your kids from breakfast to dinner. (Just be sure to stock up on blueberries, strawberries and bananas before you begin!)
Healthy Memorial Day Idea #1 Patriotic Breakfast Toast
Ingredients:
Cream Cheese, softened
Strawberry Jelly or Jam
Bananas, Sliced
Blueberries
Bread
Toast your slice of bread and then spread cream cheese over the entire piece. Place four blueberries in the upper left hand corner of the toast to resemble the blue portion of the flag. Cover the remaining part of the toast in strawberry jelly or jam then create two rows of sliced bananas, making sure that the jam pokes out in between to give the appearance of four stripes.
Healthy Memorial Day Idea #2 Fruit Pizza Flag
Ingredients:
Cream Cheese, softened
1 cup flour
½ cup powdered sugar
1 stick (1/2 cup) butter
Bananas, sliced
Strawberries, sliced
Blueberries
To make the fruit pizza crust, combine the flour and powdered sugar in a bowl and cut in the butter until the mixture is combined and crumbly. Press into a greased pizza pan and bake at 325 for 10 minutes, or until slightly browned. When cooled, spread the cream cheese over the entire surface of the pizza. On the top left quadrant of the pizza, fill the space with blueberries. For the remainder of the pizza, alternate the sliced bananas and strawberries to create flag stripes.
Healthy Memorial Day Idea #3 Red, White and Blue Pasta
Ingredients:
1 box of pasta (spaghetti, bowtie, or any other shape)
Parmesan Cheese
Red and Blue Food Coloring
Shredded or Cubed Chicken (optional)
Divide the box of pasta into three different pots. Using the directions on the pasta, boil one pot as you normally would, then when boiling the other two pots, add 3 drops of red food coloring to one pot and 3 drops of blue food coloring to the third pot. Cook as recommended and drain before combining your red, white and blue pasta. Toss with half a cup of parmesan cheese and add chicken if desired.
